If you speak to an Italian chef, they’ll tell you that you can always judge an Italian restaurant by its risotto. It’s not that it’s difficult to make, more that it’s easy to stuff it up.

And the nuances are what make it either great (rarely) or very average (much more common). If you’re not confident that you absolutely nail a risotto, the best advice is….don’t put It on the menu.

It’s kinda how I feel about gospel house. It’s not that it’s really hard to produce, it’s more that it’s really easy to stuff it up.

Ever so slightly wrong drums, a less than absolutely convincing choir, pianos with not the right kinda reverb… all of a sudden, it’s a disaster and absolute vibe killer.

But get it right and the angels start singing.
